Day 5 - Dinner with friends

We leave the island in 5 days! I can't believe it!

My friend Kristen had us over for dinner tonight. It was really nice for many reasons - I really don't want to cook on this island anymore, we don't have any food in our apartment, and plus, Kristen is a really good cook. Having people over for dinner was always nice in the states, but it seems extra special out here because its fun to see what kind of concoctions you can come up with, given the food available at the time. Like tonight, it was a special treat to have fresh broccoli. She also made these delicious chocolate chip cookies. Neither broccoli or chocolate chips are available very often. Its also special because it gives the other spouse the night off from cooking - cooking can become this daunting, lurking worry when you have the extra pressure that if you don't cook, you aren't likely to find something eating out that you will be satisfied with, so you might as well figure something out. One of my friends just blogged yesterday that she got quesadillas somewhere, and they were packed with frozen vegetables, cheese, and ranch sauce. I would like to say that something like that is a rare occurrence, but unfortunately things like that happen more often that not.

I will really miss these friends dinners. Although the boys spend most of the time talking about school, its also a nice time for the girls to hang out, swap recipes, and relax with our guys. Thanks to all my Dominican friends for all the friends dinners we have had out here!
