Fudgy Chocolate Avocado Truffles

I've heard about people putting avocados in their desserts and I thought those people were simply strange. Why would you ever eat an avocado in a dessert? Avocados are around to make guacamole delicious and thats about it...or so I thought. These truffles are yummy, and incredibly easy to make. I compiled a few recipes I found online and came up with these chocolate avocado truffles with as few ingredients as I could, just for simplicity's sake.

Fudgy Chocolate Avocado Truffles

Ingredients:
3/4 of a large avocado (use the rest for my face mask recipe)
1/3 cup of butter
1 tsp vanilla
3/4 cup unsweetened cocoa
1 1/2 cups powdered sugar (plus a little to roll the truffles in at the end)

Mash up the avocado until all the chunks are out. Use a fork, a spoon, a little mixer, food processor, whatever you need to do to make the avocado creamy. In a saucepan, melt the butter over low heat. Add the avocado, vanilla, cocoa, and powdered sugar. Once its all mixed together, take it off the heat. Put the mixture in a tupperware or a small bowl and place it in the freezer for about half an hour, or until it hardens. Put a couple of metal teaspoons in the freezer too, these will come in handy later.

Get a dinner plate and put saran wrap on the top of it, then lightly spray the top of the saran wrap with non-stick cooking spray. Take the mixture and the spoons out of the freezer and quickly spoon the mixture up into rounded teaspoon size globs. Place the globs on the saran wrap, make sure they don't touch each other. If it starts getting too gooey, put everything back in the freezer and try again after another 15 minutes or so. Here's what it looks like at this point -
Then put them back in the freezer for about an hour, you want them to harden. After an hour, take them out of the freezer and round the little globs into balls using both hands, then roll them into powdered sugar. Put back in the freezer until you are ready to serve, and make sure to store them in the freezer, they melt really quickly! Here's what the final product looks like - soo good and fudgy!

Coming up next week - a recipe using local pumpkin!
