One month down.....

......15 more months to go. I can't believe it, but Blake and I have been in Dominica for a whole month now. We are pretty much as adjusted as I think we will get, for this semester at least. We are moving somewhere bigger next semester, so it will only get better from here.

Nothing new to report as far as our daily activities. I made an awesome margarita pizza last night, so I'll share some info on that. With the lack of grocery stores and variety of food, I've been learning to make a lot of things myself...like pizza. I found fresh basil and plump tomatoes at the market on Saturday morning, so I figured why not! I made bread sticks too, they were great!

I followed the recipe below for pizza dough, and covered it with pizza sauce (recipe below), mozzarella cheese, basil, and tomato slices.

Pizza Sauce
28 oz. can crushed tomatoes
3 tbsp. olive oil
1 tbsp. dried basil
1 tbsp. dried oregano
1/2 tsp. dried marjoram
2 tsp. crushed red pepper flakes
1/4 tsp. salt
3 garlic cloves, finely minced

Combine all the ingredients in a sauce pan over med-high heat. Bring to a boil and reduce to a simmer. Simmer for 20 mins. **I used most of this for the pizza sauce and used the left-overs for dipping sauce for the breadsticks**    (Recipe was from Annies Eats, but I changed up a few things)



Pizza Dough
3 cups flour
1 tbsp. olive oil
1 cup warm water
1 tbsp. yeast
1/2 tsp. garlic salt.

Preheat oven to 475 F. Mix all ingredients except flour. Add flour and kneed for 5 mins. Let sit for 10 mins. Roll onto pan and top with pizza ingredients. (I rolled it onto a greased cookie sheet and it took 25 mins to cook thoroughly, but if you use a pizza pan or pizza stone, it will take less time to cook). (Recipe from Mels Kitchen.com but I changed up a few things)


Breadsticks
1 1/2 cup warm water
1 tbsp. instant yeast
2 tbsp. sugar
3 1/2 cups flour
1/2 tsp. salt
3 tbsp. butter, melted - for cookie sheet

Mix ingredients and kneed for 3 mins. Let dough rise for 10 mins. Spread butter on cookie sheet. Roll out dough and cut into strips with a pizza roller. Sprinkle with garlic salt, italian seasonings, and parmesean cheese. Cover the pan and let rise for 30 mins. Turn the oven to 375 F. Bake 15 mins.
